A classy, dry, sparkling wine with all the depth and flavour you would expect. An exceptional fizz for every occasion!
This, our first sparkling wine, is made using the traditional method and is a truly hand made product at every stage. The base wine was created from a blend of white grapes. The acidity and sugar levels were carefully balanced to produce a very crisp dry wine which, after maturing for 6 months, was then bottled with a small dose of sugar and a special yeast for its second fermentation in the bottle. This second fermentation gives the wine its fizz, and the special yeast ensures a fine mousse and gives the characteristic sparkling wine bouquet. The wine is now maturing 'on the lees' in our temperature controlled winery and will be riddled and disgorged (to remove the yeast deposits), and finally corked, only when the full bouquet has developed. It is expected to be ready late in 2010.
