A dry, crisp and aromatic white wine with lovely fruit.
After de-stalking, crushing and pressing, the juice was cooled and settled overnight. The clean, cool juice was then inoculated with yeast and fermentation allowed to progress to completion. Having been racked off the lees (dead yeast) the wine was matured in tank. It was then bottled with a small dosage of fresh grape juice giving a delicately balanced and delightfully fruity and aromatic dry wine.
