Our wines

OUR WINES

All our wines are made in our own winery here at Eastcott Vineyard. The grapes are closely monitored as they ripen and are hand picked at just the right stage of maturity for the style of wine we want to make. They are then immediately transported to the winery for processing so as to ensure we obtain the highest possible quality juice, with all the freshness and fruity aromas intact.

Eastcott sparkling wines are made using the traditional method (Methode Champenoise), as originally developed by Christopher Merret in seventeenth century England. This involves two fermentations, the second taking place in the bottle. A long maturation period is also needed to allow the characteristic flavours to develop and to transform the wine from a very nice sparkling drink to something quite exceptional.
